Family behind Michelin-starred Indian restaurants Gymkhana and Trishna to open a new venture

The family behind Michelin-starred Indian restaurants Gymkhana and Trishna are launching a third site in Soho in October called Hoppers. It’s inspired by the roadside shacks of southern India and Sri Lanka. Rohit Ghai, the group executive chef, will head up the kitchen and will focus on serving a menu focusing on hoppers – a thin, bowl shaped pancake made from fermented rice batter and coconut milk, and dosas – crepes made from fermented batter of ground rice and lentils. Karam Sethi, who will operate the restaurant with his siblings Jyotin and Sunaina, said: “It’s a style of food that I’ve been eating for years and the dosa is already a very popular dish in London. Hoppers will sit separately to Gymkhana and Trishna in the sense that it’s casual and cheaper per head. I see it as being more of a fast moving concept, around 45 minutes per meal. The menu has been designed so that there is enough choice and variety to allow you to eat every day of the week”.
